Mia Allen

Director of Catering Sales

Born and raised in a family of chefs, florists, party planners and caterers- events have always been a major part of Mia’s work and personal life. As her career and passion intertwined, Mia continued to build her resume with the Max Group (Hartford, CT) working various positions within the Catering and Events sector. Mia became versed in managing and planning events for multiple nonprofit organizations, running fundraisers, conferences and large format corporate meetings. After four years running DORO Catering and Events as the Director of Catering, she has developed a passion for her work, planning and executing a variety of events and working with a diverse clientele. Her favorite part of her job is getting to know her clients, customizing a menu and design concept for their event and seeing their excited reactions and feedback during and after. She loves taking ideas and making them come to life- sharing in the joy and excitement of special and unique experiences. She loves traveling, is an avid scrapbooker and is obsessed with her daughter Linnea and pointer rescue, Izzy.

Molly Brandner

Catering Sales

Molly is our newest member of the team, having worked within DORO for four years previously. She enthusiastically joined catering after working many catering events and loving the fast-paced feel of events and how no two are the same. Her favorite kinds of events to plan are birthday parties.​​​​​​​​​​​​​​​​​​@zoharakitchen is her favorite restaurant because she loves Mediterranean food. “The spices and unique flavors are fun and different than you can find anywhere else.” Baba Ghanoush and Za’atar chicken are her go-to!

Outside of work, Molly is a yoga teacher and enjoys spending time with her many nieces and nephews. She is a proud aunt to say the least.

Tony Phenis

Executive Chef

Executive Chef Anthony Phenis first found himself in a restaurant kitchen at age 15. This first taste of the hospitality world led him to attend and graduate from The Culinary Institute of America, Hyde Park New York. His first professional restaurant job came in 1997 as executive sous chef of Tapatio, a Latin American Caribbean restaurant in Columbus Ohio. With numerous television appearances and cooking classes under his belt, he soon became a television fixture in the Ohio culinary world.

After a fulfilling stint as a sous chef in Columbus, Anthony headed to Chicago after catching the eye of Select Restaurants CEO John Quagliata. Over the next four years he headed up three restaurants as an executive chef to eventually captain their flagship restaurant, Pier W in Cleveland Ohio.

Leaving the Midwest, Phenis headed to New England in 2012 to manage a gastro pub with a chef from CIA. He then became corporate chef for Mill Restaurant Group of South Windsor, Connecticut.

After three years with MRG, Anthony decided to team with West Hartford chef Dorjan Puka to open up Artisanal Burger Company for DORO Restaurant Group. He intends to use his culinary knowledge and experiences to expand DORO Restaurant Group and keep ABC and other ventures in the forefront of the culinary world.

Dan Caprio

Director of Operations

As the Director of Operations at Doro Catering & Events, Dan Caprio orchestrates the seamless execution of culinary experiences. With 20 years in the hospitality industry, Dan has refined his expertise in managing operations for high-profile events and overseeing the intricate logistics of a bustling catering company. His commitment to excellence and attention to detail ensure that each event, from intimate gatherings to grand celebrations, is executed flawlessly. Dan's leadership is marked by a blend of innovation and efficiency, continuously optimizing processes to deliver exceptional service and unforgettable dining experiences. Dan's journey in the Hospitality world began with a passion for making people happy and his dedication to creating memorable moments through food and events. His hands-on experience in menu development, vendor relations, and team management has been a pivotal part in steering Doro Catering & Events towards new heights of success. Beyond his role in the kitchen and operations, Dan is an advocate for sustainability in the catering industry, implementing a high-performance culture. Creating an environment where employees are motivated, engaged and driven to excel. Achieving outstanding results, continuous improvement, innovation, collaboration and accountability at all levels. Outside of work, Dan enjoys spending quality time with his family, traveling and experiencing life with his fiancée Caitlin. Dan is recently engaged and is very much looking forward to planning his own wedding next year!
